American Peach Cobblers

Just made this the other day and you got to try this very simple but delicious recipe. My kids loved it and my husband ate it without saying a word which means it was 'good'...

For the Filling:
1/4 cup sugar
1 tbs cornstarch
4-5 fresh peaches, pitted and cut in small pieces
1 tbs fresh lemon juice

For the topping:
1 cup all purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
3 tbs cold butter, cut into pieces
2/3 cup low-fat buttermilk

In a large bowl, mix together cornstarch and sugar. Add peaches and lemon juice, toss to combine. Divide filling evenly among four custard cups or baking dish.

Make the topping by whisking together flour, sugar, baking powder, baking soda and salt in a bowl. Using a fork or your fingers, blend in butter pieces until mixture resembles coarse meals. Add buttermilk, stir just until a dough forms (clumpy).

Drop dough onto peaches and sprinkle with a little bit of sugar. Bake until golden brown about 35-40 minutes. Let cool 15 minutes; serve warm.

Malay Pandan Cake - Kuih Pandan Bakar

This is one of the malay traditional cake, sweet with a wonderful aroma of pandan leaves. I blended the pandan leaves with a little bit of water and strained the juice. Got the typical form for it during my malaysia visit last year. Today i finally manage to make this cake for the first time...

Fanta Cake







i made this for the first time 2 days ago, simple to make and you will love it!

Ingredients:
300 g sugar
5 eggs
350 g flour mixed with 2 tsp baking powder
125 ml oil
175 fanta
vanilla extract

for the cream:
400 ml heavy cream, whip until light
400 ml sour cream
2 tbsp sugar
some vanilla extract
2 cans peaches (850 ml), well drained and cut into small pieces


Beat sugar and eggs until creamy, blend in flour. Add oil and fanta and mix well. Spread it on a greased baking pan and bake for 25 min. Let cool.
For the cream:
Mix together sour cream, sugar and peaches, fold in the whipped cream. Spread it evenly on the cake. enjoy!!!

Cheese-Pound Cake



I baked this cake about a week ago, the recipe is very simple:

Ingredients:
250 gr butter, softened
200 gr cream cheese
350 gr sugar
5 eggs
450 flour, sifted
2 tsp baking powder
1/4 tsp salt
1 tsp baking soda
1 tsp vanilla essence

Mix butter, cream cheese and sugar with a hand mixer until creamy. Beat in egg one by one. In a separate bowl mix together flour, baking powder, baking soda and salt. Add flour to the egg mixture, stir but do not over mixed. Pour in a greased baking form and bake at 180°C for about 45-50 min.
