American Peach Cobblers

Just made this the other day and you got to try this very simple but delicious recipe. My kids loved it and my husband ate it without saying a word which means it was 'good'...

For the Filling:
1/4 cup sugar
1 tbs cornstarch
4-5 fresh peaches, pitted and cut in small pieces
1 tbs fresh lemon juice

For the topping:
1 cup all purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
3 tbs cold butter, cut into pieces
2/3 cup low-fat buttermilk

In a large bowl, mix together cornstarch and sugar. Add peaches and lemon juice, toss to combine. Divide filling evenly among four custard cups or baking dish.

Make the topping by whisking together flour, sugar, baking powder, baking soda and salt in a bowl. Using a fork or your fingers, blend in butter pieces until mixture resembles coarse meals. Add buttermilk, stir just until a dough forms (clumpy).

Drop dough onto peaches and sprinkle with a little bit of sugar. Bake until golden brown about 35-40 minutes. Let cool 15 minutes; serve warm.
